Mexican salad with meat
Add tomatoes around the plate
Add sliced black olives
I store ripe avocados in the fridge
Quarter one avocado - enough for two plates of this salad
Remove from skin with a spoon
Cut avocado into smaller pieces
Alternate avocado with tomatoes and olives
Now slice and chop some ontion
I use two different salsas from Trader Joe's
Add some roughly chopped lettuce in the middle
Radicchio adds a nice balance of flavors
Added more lettuce, then topped with the radicchio
Drain a can of black beans - enough for two plates of this salad
Add two stripes of black beans
Chop up some leftover meat
Add two stripes of meat on top
Add salsa on top of the meat
Add some grated cheddar cheese, and enjoy!
